Savory mushroom risotto. It’s creamy, garlicky, swirled with mushrooms, and finished with fresh thyme. It is a comfort food made healthier without dairy. Or add a bit of parmesan at the end for boost the flavor. It takes time and lots of stirring but everyone in the house will enjoy this dish!

MUSHROOMS contain essential amino acids - are low calorie and have fiber, vitamins, and antioxidants. There is research looking at whether mushrooms strengthen the immune system and are helping with cancer treatments. As far as we know, there is nothing in the mushrooms or compounds that would be harmful but we don't currently know how helpful they are in cancer care. We love their earthy flavor and mushrooms are an excellent addition to a healthy diet.
Mushroom Risotto
Ingredients
- 8 c. – 10 cups vegetable broth (can make with bouillon)
- 3 tbsp. extra-virgin olive oil
- 2-3 shallots, finely chopped
- 2 cloves garlic, minced
- 1 lb. button/crimini/shitake mushrooms sliced
- 4-6 sprigs thyme leaves removed
- kosher salt
- Freshly ground black pepper
- 2 c. Arborio rice
- 1/2 c. white wine
Instructions
- In a heavy skillet heat 1 tbsp olive oil over medium heat.
- Add mushrooms and shallots and sauté until tender about 8 minutes.
- Heat another tbsp olive oil, then add garlic, thyme, salt and pepper and stir for an additional minute.
- Remove mushroom mixture from pan and set aside.
- Add 2 tbsp olive oil to pan over medium heat.
- Add rice and stir until rice begins to look a little translucent 4-5 minutes.
- Add ½ cup white wine and bring to a simmer stirring constantly until liquid is absorbed. Add 1 cup vegetable stock and stir until almost all broth is absorbed. Continuing adding vegetable stock ½ cup at a time until liquid is almost absorbed. (This can take 20 -25 minutes.)
- Add mushrooms mixture and stir to combine.
- Simmer for an additional 5 min on low heat stirring. Risotto should be creamy, but firm to the bite. Transfer risotto to a serving bowl.
- Garnish with fresh thyme (add shaved parmesan, if including dairy in diet.)
