African Peanut Soup

Soul warming soup that is spicy, creamy and filling.

Ingredients

  • 1 tsp olive oil
  • 1 sweet onion
  • 3 cloves of garlic, minced
  • 1 Bell pepper, color of choice
  • 1 jalapeno, seeded and diced
  • 1 medium sweet potato, raw, peeled and diced
  • 1 (28 oz) can diced tomatoes with juices
  • 1/3 cup peanut butter
  • 4 cups vegetable broth
  • 1 1/2 tsp chili powder
  • 1/4 tsp cayenne pepper
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 2 cups of baby spinach or kale

Instructions

  1. In a stock pan heat the oil and add onions and garlic and cook/saute until translucent
  2. Add bell pepper, jalapeno, sweet potato, and tomatoes. Simmer for about 5 minutes. 
  3. Add chili and cayenne. Salt and pepper to taste
  4. Add vegetable broth and peanut butter and whisk to make sure the peanut butter dissolves.
  5. Cover the stock pan and reduce the heat to medium-low. Simmer for 10-20 minutes or until the sweet potato is tender. 
  6. Stir in chickpeas and spinach or kale. 
  7. Suggested garnish: cilantro and peanuts.
