African Peanut Soup
Soul warming soup that is spicy, creamy and filling.
Ingredients
- 1 tsp olive oil
- 1 sweet onion
- 3 cloves of garlic, minced
- 1 Bell pepper, color of choice
- 1 jalapeno, seeded and diced
- 1 medium sweet potato, raw, peeled and diced
- 1 (28 oz) can diced tomatoes with juices
- 1/3 cup peanut butter
- 4 cups vegetable broth
- 1 1/2 tsp chili powder
- 1/4 tsp cayenne pepper
- 1 (15 oz) can chickpeas, drained and rinsed
- 2 cups of baby spinach or kale
Instructions
- In a stock pan heat the oil and add onions and garlic and cook/saute until translucent
- Add bell pepper, jalapeno, sweet potato, and tomatoes. Simmer for about 5 minutes.
- Add chili and cayenne. Salt and pepper to taste
- Add vegetable broth and peanut butter and whisk to make sure the peanut butter dissolves.
- Cover the stock pan and reduce the heat to medium-low. Simmer for 10-20 minutes or until the sweet potato is tender.
- Stir in chickpeas and spinach or kale.
- Suggested garnish: cilantro and peanuts.
