This is an easy and nutritious sheet pan dinner. Some of us added ground Beyond Burger - just to try it and it was really good. But it is a delicious without too. The crispy broccoli makes this dish!

Broccoli is cruciferous vegetable and these are real changemakers in the Anticancer Method diet. Cruciferous vegetables full of nutrients, including several carotenoids; vitamins C, E, and K; folate; and minerals. They also are a good fiber source.
Increase your fiber by using brown rice over a white rice.

Broccoli and Mushroom Fried Rice (with ground Beyond Burger)
Ingredients
- 2 cups jasmine rice or brown rice
- 1 bunch broccoli
- 12 medium shitake mushrooms
- 6 tablespoons avocado oil
- 2 tablespoon toasted sesame oil
- 4 tablespoons tamari or less sodium soy sauce
- 2 teaspoons Sriracha, plus more for serving
- 2 tablespoon grated ginger
- 16 oz ground beyond burger (or impossible burger)
- 4 scallions
- ¼ cup chopped fresh cilantro
Instructions
- Preheat oven to 400°.
- Cook rice, as directed. We used our instant pot and for Jasmine rice it it is 1:1 ratio. 2 cups of rice with 2 cups of water or broth. Jasmine rice cooks in a pressure cooker in 5 minutes on high with a 10 minute natural release.
- In a small bowl, stir together the avocado oil, sesame oil, tamari/soy sauce, Sriracha, and ginger.
- Once rice is cooked. Spread the rice onto a large rimmed sheet pan.
- Chop broccoli into florets and chunks of stem. Add to rice on sheet pan.
- With a damp paper towel, wipe the mushrooms clean. Thinly slice and add them to the pan.
- Drizzle half of the sauce over the rice mixture and toss well. Then drizzle the remaining sauce, toss again, and spread into an even layer.
- Roast for about 25 minutes, or until the broccoli is slightly charred and tender.
- Heat non-stick pan over medium-high heat, add Beyond Beef. Cook about 5-8 minutes, breaking up to desired crumble size and stirring frequently.
- Meanwhile, thinly slice the scallions and chop the cilantro.
- Divide the rice among bowls and top with the ground beyond burger (if using) scallions, cilantro, and a little more Sriracha, if you like.
