Sweet Spiced Pumpkin Bread

Pumpkin Bread Recipe

Sweet Spiced Pumpkin Bread is a soft, warm, quick-and-easy and very delicious after school snack or a quick breakfast all winter long. We love the spices and our kids crave it with a little butter on top.

Anticancer Tip:

  • Cinnamon is a readily available spice that is being studied by the medical community because of its positive health attributes.

  • Cinnamon is loaded with polyphenol antioxidants and is considered a super food. Antioxidants protect the body against free radicals that can cause oxidative stress, which can lead to cell and tissue damage.

  • Cinnamon is also anti-inflammatory. Our body needs inflammation to fight infections and repair our tissues. But when inflammation is chronic our healthy tissues can be affected.

  • Cinnamon can also increase cell’s sensitivity to insulin and lower blood sugar levels and this helps prevent weight gain and diabetes.

For these reasons, cinnamon is not just a holiday spice. Let’s eat it all year long!

Sweet Spiced Pumpkin Bread

This a delish and spicy (+extra cinnamon) Pumpkin Bread
Prep time: 10 MinCook time: 30 MinTotal time: 40 Min

Ingredients

  • 1 2/3 cups flour
  • 1 tsp baking soda
  • 1 1/2  tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp ground ginger 
  • 1/4 tsp salt
  • 1 cup sugar 
  • 1/3 cup avocado oil
  • 1 15 oz can pureed pumpkin
  • 1 large egg

Instructions

  1. Preheat oven 350 degrees fahrenheit.
  2. Sift together flour, baking soda, cinnamon, ginger, cloves and salt. 
  3. Combine sugar, oil, and pumpkin. Stir till smooth. Add 1 egg and mix well. 
  4. Grease a loaf pan. Transfer pumpkin mixture to pan.
  5. Bake 20-30 minutes. Test with cake tester to confirm baked through. Then enjoy!
